Discover Casa Artusi Foundation
Casa Artusi was born from home cooking, drawing inspiration from the spirit of La Scienza in cucina and the ideas of Pellegrino Artusi, whose life and work it promotes. The Fondazione Casa Artusi is the first institution entirely devoted to sharing and promoting Italian food culture around the world. Casa Artusi has played an active role in supporting the candidacy of Italian cuisine for UNESCO World Heritage recognition.
Guided tour
Tour of the gastronomic culture center dedicated to home cooking: the courtyard, the recipe gallery, the Church of the Sevants of Mary, the loggiato (arcade), the gastronomic gallery, the Pellegrino Artusi library and the cooking school (hall 22m x 7m, with 20 seats fully equipped for cooking).

HANDMADE PIADINA ROMAGNOLA HANDS-ON EXPERIENCE
Piadina Romagnola: the typical flat bread of Romagna
Everybody in Romagna eat Piadina, every day and it has become a very popular street food. Historical introduction about the “bread of Romagna”, information about raw materials (soft wheat flour type 1 or organic, Sweet Salt of Cervia, Mora Romagnola pork fat or Extra Vergine Olive Oil); first the demo: You will see how to prepare and cook piadina on the typical clay cooking pans (called Teglie di Montetiffi) and of course taste it! Then in an individual cooking workstation you will prepare the piadina dough, stretch the piadina with the rolling pin and cook it!
Then Piadina will be tasted together with Squacquerone di Romagna PDO (local fresh cheese).

PASTA CHE PASSIONE (basic level) HANDS-ON EXPERIENCE
Typical Italian homemade fresh pasta
Historical introduction about Italian pasta and information about raw materials. We will show how to prepare the dough (soft wheat flour and eggs) and then, using only a rolling pin, a knife and a pasta cutter steel or bronze wheel, we will make the different shape of this typical Italian pasta. Then, in an individual cooking work station, you will personally prepare the dough and make, with his own hands, the different kind of pasta: tagliatelle, pappardelle, tagliolini, garganelli. You will bring home his own hand-made pasta!

We will show you how to prepare the dough (soft wheat flour and eggs) and then, using only a rolling pin, a knife and a pasta cutter steel or bronze wheel, we will make the different shape of this typical Italian pasta like tagliatelle, pappardelle, tagliolini, garganelli. You will be able to learn how to make filled pasta like cappelletti (or tortelli or ravioli) and its delicious filling with the savor of Parmigiano Reggiano PDO cheese, Ricotta and Squacquerone di Romagna PDO.
